Puerto Rican Adobo
This blend is a favorite addition on Taco Tuesdays when we are looking to make a quick instapot meal. Our version of Adobo is full of flavors we love; a bit of cumin, a bit of coriander, the warmth of tumeric, and a mix of other herbs. The best: It is nightshade free.
We often have leftover proteins and this is such a great blend to use to "remake" leftover chicken or pork. We simply added a 1/2 cup Tamari (yes we may not want soy additives to our food but we do use wheat free Tamari) a 1/4 Cup of white vinegar to 2 pounds of chicken we marinated in 1 1/2 tsp of our Adobo seasoning We put in a layer of sliced red onions, put the marinated cooked or seared chicken on top, poured in the vinegar and Tamari set the instapot for 10 minutes on high pressure. We of course made up some of our cilantro lime rice and it was a tasty tuesday dinner.
